What is the process for trussing a chicken?
My neighbor's daughter is a chef at a gourmet restaurant. She told her aunt that trussing a chicken will allow it to cook more evenly and protect it from over cooking. So my neighbor passed along the information to me. However, I have no idea what trussing a chicken means, let alone the process. What does it mean to truss a chicken, and what is the process?

Trussing is the process of tying a chicken such that it is better suited for cooking.This helps keep the wings and legs moist and help in cooking the whole chicken evenly.Works out great for stuffing recipes.
This can be done in two ways .Either by way of tying with a string or by skewing with a wooden or steel skewer. In case of using a wooden skewer ,soak the skewer for about 30 minutes in water to avoid burning. We normally use the second method in our home.
