You have got to visit Buckingham Palace, and see the Changing of the Guards. This is as english as it gets.
You should also take a bus-tour with one of those red bouble-deckers. They are now only used for sight-seeing, but are also very London.
If you have the chance, also take a black taxi (or any of the many other colours that drive around nowadays). Still the quickest way around the city, apart from the excellent Metro system.
And of course, you should visit a theatre, and see one of the many musicals. You can either book tickets in advance (if you are licky on what show to see), or try your luck at one of the 'half price' booths, that offer last minute tickets to many shows that are not fully sold out. Of course your choice is somewhat limited then.
Don't forget to go shopping, especially if you are there just before Christmas. Harrods is THE top warehouse to visit, even if just to gawk at all the (pricy) stuff there.

If you're into sport you should go see Wimbledon which begins next week or catch a cricket game at Lords.
