Are you looking for price, food, comfort? Business class or coach? I'm assuming from the wording of your question that you do not have elite frequent flier status (e.g. 25,000 miles/year or more) with any airline.
Only two airlines fly the route non-stop: Air France and Air Tahiti Nui. From what I read at seatguru.com, Air France will have one extra inch of legroom (32" vs. 31"). Air France also has more flight times each day.
But for tickets six weeks from now, both airlines were about 50% more expensive than flying United. United would have the same legroom as Air Tahiti, but you can purchase "Economy Plus Access" for $349 and you and a companion can fly in the front of the Economy section with 3-5 inches more legroom depending on the plane type (as long as there are seats available) not just for that flight, but for all flights on United within a year.
So, if you can use the extra legroom, I'd fly United if you can find it significantly cheaper for your travel dates, buy the Economy Plus Access and endure the change of planes. Now, United's food and in-flight-entertainment are not great, but with the money you save you'll be able to splurge for a great meal in Paris.
If you can't use the extra legroom, then you need to look at the airfares and decide how badly you want to fly the nonstop. You can expect that Air France will have better in-flight service, so I'd probably pay up to 15% more for the nonstop. And if you're flying business class, I'd definitely fly Air France instead of United.
