Okay... since I lived there for 10 years, let me give you a few ideas.

Places to eat:
If you're staying downtown, there are lots of great places to try. For fun food I recommend D'corazon in Lodo on Blake Street just off the16th Street Mall.
The best Mexican food East of the Rockies! Tell Eddy I said "hi".

For a fancy or romantic dinner, please try out Maggiano's Little Italy. The happy hour is fantastic, but beware of the enormous dinner portions!

Places to see:
If you're renting a car, I would take a drive North on Hwy 25 to Boulder. It's a small enough town to explore all on your own! (even if you're not renting a car, there is a bus that leaves downtown every hour and takes you straight to Boulder!) Get a map and have fun with this one.

You can head west for less than an hour on Hwy 70 and see Lookout Mountain where Buffalo Bill is buried. There is a museum for him and there are huge panoramic views! From this mountain you'll have a clear view of Coors Brewery which offers free tours.

Not far from there is Red Rocks Amphitheater which has a rich history of music performance and is a state park with stunning views and hiking trails!

Depending on how much time you have, these ideas should get you started. Once you land, there are plenty of free publications offering ideas and places of interest.
