Sure, Ill try my best! There are actually a couple noted "green" ships out there. If they serve organic foods or not, a little more research would need to be done. But lets see here:
Right now there are two MAJOR green cruises:
Royal Caribbean and Celebrity cruise lines have added General Electric’s alternative engine technology — gas turbine — to their newest ships. This system reduces nitrous oxide emissions by 80% and sulfur oxide by 98%. As an added relaxation bonus, the engine is less noisy than traditional ones.
Princess Cruise Lines has reduced air pollution created by idling vessels in port by modifying their engines so they can be turned off while docked and plugged into a nearby land-based hydro-electric power plant. The electricity from the plant is transferred to the ships via specially designed cables. While this currently exists in only one port — Juneau, Alaska, at the cost $4.5 million dollars — the cruise line feels it’s worth the environmental investment and hopes to expand this inventive solution.
As for ones that service organic foods, some of these are actual LINES and some are just specific locations.

MSC CRUISES. Guests on MSC Cruises are offered numerous opportunities for cruises with wellness, fitness and organic food and wine themes. Among the shipboard programs are: in-depth study of massage
techniques and beauty treatments, “well-being” packages with Balinese and Thai massage, reflexology and ayurveda, group fitness programs, special healthy menus, even “well-being” cocktails. This year, the MSC Opera will offer a wellness cruise from Copenhagen beginning September 13; the MSC Lirica will feature an organic food and wine theme on a seven-day sailing from Genoa on September 29, and MSC Sinfonia will feature fitness on its eight-day sailing from Buenos Aires on December 9. These themes will be repeated in 2008. Gotta check out their website for 2009 / 2010

Lindblad Expeditions, allied with National Geographic, offers soft adventure voyages on a fleet of seven capable vessels carrying from 48 to 150 passengers. Forget big-ship accouterments like in-cabin TV's, casinos and multiple bars and restaurants (though the newest ship in the fleet, National Geographic Explorer, has added a decent-sized spa and alternative eatery). Ships are comfortable, and there are some great touches, like the local and organic foods used in meals.
