What a coincidence--I was just planning my May trip to Tahoe!

Since you'll already be in Emerald Bay for Vikingsholm, you should also check out more activities in that area. Personally, I've always wanted to go scuba diving and explore the boats, etc. that were used during the construction of Vikingsholm. I'm not sure if you need scuba certification for that though. A little further south, the rest of Emerald Bay State Park in is also a nice little day hike; you can get maps and recommendations from the park station. If you're going after June 15th, you can also visit Fannette Island. The island (as well as Vikingsholm) will no doubt be swarming with little Canada goose goslings.

I don't know you're tastes, but the Carnival Cabaret at the Horizon Casino & Resort looks the most interesting to me: http://www.horizoncasino.com/entertainment/golden_cabaret.php. Basically, really convincing drag queens impersonating female celebrities like Cher and Barbara Streisand.

I'm not familiar with GF options in Tahoe. Here are some recommendations from others:
Freshies Restaurant & Bar:
- "The wait staff also knew how to handle gluten free with no problem...a woman at a neighboring table inquired about their options and the waitress answered her questions knowledgeably. I love the Lake Tahoe Shakespeare Festival. The plays are performed open-air, with the lake extending into the twilight behind the stage. Sadly, I just looked it up and the festival doesn't actually begin until July 11th. Still, if you're schedule is at all flexible, I would really suggest checking the festival out.

Any recommendations of must do activities or GF eats in the Lake Tahoe Area?
I've been to Tahoe in the winter but never in the summer. I'll be going mid June and and the one thing I know I want to do is visit vikingsholm, and we're not big on gambling. Also need recommendations on places to eat, specifically Gluten Free Friendly *This is very important *
