Several places spring to mind,
1. Still Thoughts Vegetarian Restaurant. Its near the national art museum and run by Buddhists. 18A Dafosi Donjie, Dongcheng District PH 64088941
2. Xinjiang Restaurants will have a variety of vegetarian food as well, you can find them all over the city.
3. Western food, head to Middle eastern food places such as tapas in Mare restaurant in Salitun. 14 Xindong Lu, Chaoyang District PH 64171459, 64165431
If you want a good list, buy yourself a copy of "Insiders Guide to Beijing" when you arrive. http://www.immersionguides.com/products/7/Insiders-Guide-to-Beijing-2008 You can find it in the Foreign Languages Bookstore at Wangfujing (Just beware of anyone wanting to take you to a tea house or show you student art as they are the common scams in that area... oh and beware pickpockets as well).
Also look for the free Expat magazines which will list all the new ones, Timeout etc... Otherwise just hail any other expat and they will be more then likely to help you out.
To be honest it is difficult to be a vegetarian in Beijing (as any expat will tell you) as the concept is pretty strange to the Chinese people. Most of the vegetarian expats I met while there did their own cooking. Although that said depending on where you are staying the hotel restaurant may cater for you :) Enjoy Beijing!
