A recipe for quick and easy chicken pho I adapted from an online recipe:
4 cups chicken broth
1 cup shredded chicken
1 tbsp fish sauce
1 cm fresh ginger
salt
3 cloves
1/2 tsp crushed coriander seeds
a bunch of cilantro
a bunch of bean sprouts
1 scallion, diced.
200g dried pho noodles
Method:
1. Cook the dried pho noodles until soft in boiling water.
2. Make the soup, simmer the broth with the seasonings, except cilantro and scallion.
3. Arrange the pho noodles, scallion, shredded chicken, and bean sprout in individual bowls. Pour in the broth. Add the cilantro for garnish.
