By southern colonies, do you mean the Southern U.S. Colonies, namely Virginia, North & South Carolina, and Georgia? Otherwise we're talking about the Caribbean Colonies, like Cuba, Jamaica, Haiti, Puerto Rico etc.
The Southern U.S. Colonies were all established between 1607-1732. Most of these began as small farming and trading enclaves. They were a slow growing bunch at first. Enslaved africans were probably present from the very beginning, likely as servants.
A dramatic increase in the number of enslaved africans occurred when europeans began to establish plantations. Plantations were large farms often devoted to single crops. These crops included cotton, tobacco, rice, and indigo. Further south in the Carribean islands, you can add Sugar Cane to the list. All of these were great cash crops and could make the owners wealthy.
Plantations needed lots of workers, toiling in horrible conditions. After the Europeans killed off or worked to death the surviving native americans, they shifted to enslaving africans in teh 1600's
