Sesame oil is made from pressed sesame seeds and is typically used in Asian dishes. The light oil, made from untoasted sesame seeds has a nutty flavor and is used for frying, while the dark oil, made from toasted sesame seeds is used more as a condiment for flavoring. Sesame oil is high in polyunsaturated fat,contains magnesium, copper, calcium, iron, vitamin E and vitamin B6.

Aside from the unique flavor that sesame oil imparts to your recipes, it is also good for you. It is a natural antiviral and anti inflammatory agent and has been demonstrated in India as useful for unblocking arteries. In Holland, Ayurvedic physicians have used sesame oil in the treatment of Hepatitis, Diabetes and Migraines. There are many more health benefits associated with sesame oil, but one of the main benefits is that it tastes good.

Sesame oil is used for flavor not effect. While most oils impart a subtle flavor on food, sesame has quite a strong taste and scent.

Fried rice tastes really bland when it is made without sesame oil.

Sesame oil makes for a deeper, more complex overall flavor.

Seasame Oil also known as gingelly oil and til oil, is rich in Vitamin E and B complex, a high content of minerals such as calcium, magnesium and phosphorus.The presence of high levels of polyunsaturated fatty acids in the oil is of great value in controlling high blood pressure and the Vitamin E present in it ,is an anti-oxidant which means it helps lower cholesterol.It is also said that it is very resistant to rancidity.
