Althought it is a great feeling to brag about one's technical superiority to a friend, getting the latest computer update comes at a high price. As such, something that is more common in every system, has been tried and tested, and all people are familiar with is really the way to go for the next 2 years or so.
Even though light peak may be able to deliver faster speeds, it will need a converter to work on older systems, and especially in today's economy people will be holding on to their old technology longer and longer. A converter is just one more piece of equipment to carry around, and I have yet to feel limited by USB's space or data transfer capability.
Also it is important to consider CD-R and even floppy disks are still used by many corporations - updating the software on the new format will take money, so progress will be slower than it can ideally be.
