There are a number of ways to download/capture videos from YouTube.
Tracing a video is a forensic issue. If your camera supports geotagging, then the location data will be stored in the meta data for the video, which will persist after uploading. Your best bet is to either disable the geotagging, or scrub the metadata before you upload. Also, geotagging aside, if the location of the shoot is recognizable, YouTube can't do anything about it.
As for personal information, that's entirely up to you. YouTube doesn't hold much personal info. An email address is all that's mandatory: anything else is voluntary. Do they protect it? As best they can, yes, but there's no such thing as perfect security, so if you're really concerned, your best bet is to not give it to them in the first place.

As far as tracing it back to a location, it could be traced to the computer where it was uploaded, but as far as location it was taken at, someone would have to recognize it. I noticed the theatre where our ballet company performs in someone else's video, which was cool because I didn't know that group had ever performed there.
Youtube doesn't really have a lot of personal information there, unless you specifically enter in the comments of a video. If a video was shot in your living room, it's probably like about 10,000 other living rooms with that same floor plan, and unless you give your street address I don't see how that could be a problem.

Questions about security and privacy on YouTube
If a video is uploaded to YouTube, can anyone copy, capture or whatever the correct word is, the video? Can someone trace the video to the location where it was taken or created? Does YouTube provide adequate protection of personal information?

I can't answer all of your questions, but you can prevent embedding your videos, and you can make viewing private and limited to 25 people you choose.
