For entertainment, you can't go wrong with Tap Tap Revenge 2.6 (4 stars), a game similar to Guitar Hero. BubbleWrap (3 stars) is another app to check out as well, though it may get old quickly (unless you love bubble wrap). If you like word games, try out Word Scramble (3 stars).
If you have a Facebook or Myspace, you might also want to check out their Apps as well. For Twitter usage, try out TwitterFon (3.5 stars) or TweetDeck (3 stars)
Music - I highly recommend the app version of Pandora (3.5 stars) - great way to discover new music. iheart radio (3 stars) is also a good option if you are connected to the internet and want to listen to some radio.
Reference - Dictionary.com (3.5 stars) for all your dictionary and thesaurus needs.
News & Sports - ESPN ScoreCenter (3.5 stars) lets you keep track of sports scores and your favorite teams. NY Times (4 stars) gives you access to New York Times articles.
***NOTE: One of the posts mentions Shazam... while it is a fantastic app, iPod touch users MUST HAVE AN EXTERNAL MICROPHONE FOR THE APP TO WORK, otherwise Shazam has no way of grabbing a sample of the song.

app - Twitterific. The new 2.0 version. Free (ad-supported) version, the most full featured Twitter client on the iPhone. If you have poor vision the ability to make the text larger is really useful.
app - Skype. Make phone calls from your iPod Touch if you have a wi-fi connection.

Mint.com is a great application. It keeps all of your finances in order and if you're out and about, and don't have internet on your phone, you could whip out your iPod and see how much money you have in the bank. You can add many other bank accounts, also, so that you can keep all of your money on track.
If you like to eat at a lot of restaurants, I'd say use OpenTable. It's a way to search for the restaurant (and the location) of the place you want to eat, and make a reservation- all through your iPhone/iPod. My boyfriend and I have used it quite a bit and it's great!
Another great application is C.A.R. If you are ever involved in an accident, it is a way to take down all of the other people's information. It provides a place for your license number, the other person's, if there were any injuries, ect. It's a practical application because anyone, anywhere, can be involved in an accident!

Shazam - lets you identify a song when you hear it playing by grabbing a several second snippet.

game - TapDefense. It is a tower defense game. Beautifully balanced game play, excellent strategy, and the developers have made major improvements since it first came out. It is free.
