Hmmm, I never thought it was all that bad. But, like everything else in iTunes, you can select the book and choose "Get Info". Select the "artwork" box and navigate to whatever picture you want to use.
Find a good high-res picture off of Amazon, save it to the same folder as the book, then make it the cover in iTunes. Doesn't take that long and shouldn't be too much of a pain unless you are downloading a large volume of books.

How do I get Audible to improve the low resolution artwork that displays on my iPhone?
The artwork displays at a low resolution, making it appear fuzzy and unprofessional. Audible has acknowledged the issue and vowed to repair it.... 10 months ago!! Where is the fix? This issue is discussed all over the web and reflects poorly on the service.

Unfortunately, that route doesn't work. I've tried it. Apparently, either Audible or iTunes has instituted DRM that prevents changing the artwork. You can drag Amazon images onto the box, but it doesn't add. I was hoping there was another way to go.

I don't know about dragging artwork, but using the above method I changed the cover art on a couple of my Audible downloads. Did you try selecting "Get Info" and then clicking on the artwork box and navigating to the saved image?
