I've done this several different ways. But, one method that doesn't rely on any software is to use this- the "YouTube Video Download Tool" found within the TechCrunch site http://www.techcrunch.com/get-youtube-movie/
Simply enter the URL of the page that has the video and it will be downloaded as a .flv. From there, you can easily convert it to another format, if need be.

Copy paste the youtube link into its google-styled input box in the middle of the screen, and it'll do the rest for you! Just click "download" to have it saved to your computer right away.
Also works for Google video etc.

There are many other programs, and probably some plugins for Firefox that can do the trick, as an alternate solution.
FLV is the flash video format. If you want to play it in other media players, you will need something to convert it with. Here's a website that will do it all for you, and might be better than what I've used personally:

Go to the following site http://www.zamzar.com/ and you can see a tab "Download videos" and you can give the youtube link in the step1 and to which format that you want the video in the step2 and to which email address that downloaded video should be sent in step3 and then click "Convert" . However if you are constantly downloading video from sites like this (Not only youtube but other flash/divx/other video sites) then there is no better suggestion than the following firefox extension.

you can also download video by installing Internet Download Manager. It gives you option to download videos available on any site.

I will ADD, however, that once you download these files from these sites, you will most likely be left with .flv files that are not really usefull.
If your only concern is being able to play back these video files on your own computer I would reccommend the VLC media player. It's a free download and will allow you to playback these files.
BUT...
if you plan to share these video files, or load them on any sort of portable device the FLV files are useless. You'll want to convert them to an compatible format. The newest version of Handbrake is what I would reccommend, it has an option for a "Universal" format that is actually a 720p h.264 file which is compatible with iPods, Zunes, Xbox 360, PS3, PSP, and more.

Go to the video you want and then copy the following code into the address bar. It will add a link to download. I would recommend creating a bookmark with that code as the website for easy access.

Download and install Ant Video Downloader at http://ant.com/video-downloader/
Go to the page where the video is playing. Click the Download Button when video is buffering.
When the download completes click the Player Button to play the video.

I use Moyea FLV Downloader. It's easy to use and does the job. http://www.flvsoft.com/download_flv/
They also have a program to watch FLVs with, Moyea FLV Player:

There are many other programs, and probably some plugins for Firefox that can do the trick, as an alternate solution.

If you're using Firefox, I'd recommend the extension Better YouTube. Like the extension Better Gmail, it's a collection of Greasemonkey scripts that add additional functionality to YouTube, among them being a link on each video page to download that video in .flv format. Get it here:

Follow previously described instructions if using Firefox. If you prefer Internet Explorer, download Real Player. When you scroll over the video, a message will pop up in the upper right corner reading "Download this video". Just click it and follow the instructions. This works for any video on the web.

I just bumped into a LifeHacker post this week and it's so far the easiest way to do it: doesn't require you to install anything on your computer. The only thing you gotta do is to type before the "youtube" on the link the word "kick" -check link to a step-by-step instruction. Efficient and quick! just the best one! =]

All of those are great suggestions especially the first one at the top. However if you are constantly downloading video from sites like this (Not only youtube but other flash/divx/other video sites) then there is no better suggestion than the following firefox extension.

In the spirit of honesty, I'll admit that I don't have anything new to add to answer your question. All of the webites that have been previously listed in answers will work great to allow you to download the YouTube videos to your computer. If you are using firefox, which you should be, there is an addon which is called Fast Video Download, it is found here (https://addons.mozilla.org/en-US/firefox/addon/3590) It saves youtube videos as .flv, so you would need a media player, like VLC (http://www.videolan.org/vlc/) in order to play these files.
