I use the professional Video to Audio Converter, which allows me to set rich options: rip audio clips from videos, set audio bit rate (from 32 Kbps to 256 Kbps) and sample rate to get the best audio quality.

Garage Band, if you're on a Mac. Comes standard with every Mac sold, I produced 24 hours worth of pro-quality podiobook audio with it. Works as well as a package I had used previously called SoundForge (which cost me $200).
