If you're looking to change your Apple ID (which is used for iTunes, and many other Apple services) password, you can either do so inside of iTunes or at Apple's website. Apple's website is probably the best place to change it because you can also change other details of your account there, if you wish.
If you know your current password:
Option #1: Through Apple's website.
To change your details through Apple's website, visit myinfo.apple.com. Login there, and then visit the "Apple ID" tab in the sidebar to change your password.
Option #2: Through iTunes.
Inside iTunes, go to the "Store" menu, then click "View My Account". If you're asked to login, do so. Click on "Edit Account Info", and then you should be able to change your password.
If you've forgotten your current password, visit iforgot.apple.com and you can reset it there.

If you know your current password:

Make sure you're signed into itunes and then click on this link: http://www.apple.com/support/itunes/store/password/
Then, scroll down to where it says 'Account Information Screen'.
After clicking that, you'll be able to change your password.
