What's the best Hot Wings recipe?

I would love to make some for the Super Bowl.  Is there a fool-proof recipe that is delicious, hot and easy?

Oh yeah! Girl, get the celery out!

At any local supermarket, grab Franks Red Hot Buffalo Wing sauce. There are two types, either are ok. There's the ready to use, and the regular.

Shopping list:
1 12 oz jar Franks Red Hot Buffalo Wing Sauce
1 tub margarine
10 pounds chicken wings and/or drummettes
Big bottle of vegetable oil

Sauce:
Whole milk
Mayonnaise
Hidden Valley Ranch dry seasoning packet
Blue cheese

Prep:
Deep fry wings in small batches at 375 for 10 minutes. (For a lower cal version, plop them in the oven at 500 for 20 minutes, also better for large batches. I start mine in the oven then give them a quick fry)

While the chicken is frying, dump the whole bottle of sauce in a large bowl. If it's the ready to serve kind - after the first batch of chicken is out dunk it in the sauce. Try it. If it's too spicy, add melted margarine in 1/4 cup increments. Once you've got the spice just right for your tastes, dunk all the wings in the sauce and serve immediately.

Now, onto the sauce. The best dipping sauce on the face of the planet! The day (or two days) before your party, make the ranch dressing according to the package. (Dependant on how much chicken you are cooking, you may need to double or triple the recipe.) Add about 1-2 teaspoons of blue cheese per batch. To ensure stability and a good blend, hit it with a stickblender or plop the mix in a normal blender for about 20 seconds. Store in the fridge until needed!

Buffalo Wings RecipeINGREDIENTS

Wings
2 lbs chicken wings (about 12 wings)
3 Tbsp butter, melted
4 Tbsp bottled hot pepper sauce (like Crystal or Frank's Original)
1 Tbsp paprika
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon black pepper

Celery sticks (optional)

Blue cheese dip
1/2 cup sour cream
1/2 cup crumbled blue cheese
1/2 cup mayonnaise
1 Tbsp white wine vinegar or white vinegar
1 clove garlic, minced

Method: 

1 Cut off wing tips (discard or reserve for other use such as making stock). Cut wings at the joint. Put chicken wing pieces in a plastic bag. Set aside. Food safety note: when cutting raw chicken it is best to use a cutting board reserved just for cutting raw chicken. Wash thoroughly when finished. Do not let raw chicken juices come in contact with other food.

2 Create a marinade by stirring together the melted butter, hot pepper sauce, paprika, salt, cayenne pepper and black pepper. Pour all but 2 tablespoons of the marinade over the chicken pieces in the plastic bag. (Reserve marinade for coating after the pieces come out of the oven.) Seal bag and let marinate at room temperature for half an hour. When marinating is finished, drain marinade and discard bag.

3 Place wing pieces on the rack of a broiler pan. Broil 4 to 5 inches from the heat for about 10 minutes on each side, until chicken is tender and no longer pink. Remove from oven and baste with reserved marinade. 

Serve with Blue Cheese Dip and celery sticks. Makes approximately 24 pieces (about 12 appetizer servings).

Blue cheese dip

Combine dip ingredients - sour cream, mayonnaise, blue cheese, vinegar, and garlic - in a blender or food processor. Blend or pulse until smooth. Cover and chill up to a week.


***It's the bomb. Keep out the Mayo though.

It doesn't get gummy when you "sauce" the chicken first then bake it? Interesting, might just have to try out this variation!

Easy Answer:  The classic recipe is butter and hot sauce.  Tobasco or Texas Pete works well.  I use a 1:1 ratio of butter and hot sauce.

Deep fry wings in batches of 5 for 4-6 minuets depending on the size of the wing.

Prepare enough sauce to coat wings:
Melt butter in a small sauce pan over medium heat
Add hot sauce and heat for another 3 minutes.  Remove from heat.

When wings are done, toss in a bowl with the sauce.

Now for the art of wings:
I spent years trying to perfect my chicken wings.  The best wings I  made were lightly coated in peanut oil and cooked on a hot gas grill for 4 minutes on a side.  Then, toss with your favorite sauce from BW3.  While these are not the classic wings, I liked the thicker sauce.  While I got close to some of their sauces, it just wasn't worth the time and effort to make my own.

If you like wings a little drier, throw them in a 350 oven on a foil lined cookie sheet for 5-8 minutes after tossing in the sauce.  This goes for either the classic butter and hot sauce or BW3 sauce.

It really depends is it fried or baked

Fried:
eggs
flower
Texas Pete hot sauce(desired brand) and ranch dressing mixed to your likings(the sauce)
dip the wing in the eggs, dip the wing in flower, dip the wing in the sauce, dip the wings in flower, then fry. Result hot wing taste with crispy crust.

baked:
dip the wings in sauce(Texas Pete hot sauce(desired brand) and ranch dressing mixed to your likings) then bake.

Result traditional hot wings with built in dip. This eliminate the need to have dipping bowls just pick em up and enjoy now try not to give away my secret recipe. As for as a side I'd go with broccoli and blue cheese. Oh the Super Bowl is getting close(go titans) I just made myself hunger.

I just thought I'd include this one because I've never seen a hot sauce made from a Popsicle before. There was also a great tip about using a few pinches of fine bread crumbs to help the sauce adhere to the wings.
