On the Mac side, I'm a longtime happy user of iClipboard (http://www.chronosnet.com/Products/iclipboard.html). It's not free ($30) but it's the most robust and useful clipboard app I've tried - and I've tried most of them (both pay and free). It allows you to create multiple clipboards as you describe and also gives you a bunch of other options.

I am a Windows user, so the iClipboard is unavailable to me. Can you recommend anything of similar quality for the Windows XP operating system?

A quick search shows a variety of advanced clipboard managers out there, most of which support multiple 'clips'. Here's a couple links:
