So I just was wondering... Why does red piss off bulls? Is it the only color they can see or something?

The color red doesn't actually "piss off" bulls. In actuality, bulls can't see colors and like most animals, see objects in shades of gray. Instead, bulls are attracted to the motion of the cape and charge at the moving object (hopefully) instead of the human waving the cape.
The cape of the matador is red because it masks the blood of the bull. By the third round the bull has already received wounds from the previous two rounds. The third and last round is the round that the matador waves the red cape around and kills the bull.
