According to Snopes the reason they last so long is because they do not contain dairy products :P and they also mention cooking the twinkies

Not true, Twinkies are cooked. Their major ingredients are wheat, sugar, soy, and eggs. Of course they contain things like polysorbate 60 to maintain shelf-life. And they are cooked in huge industrial ovens. There's actually a fascinating book called Twinkies Deconstructed. It talks about the processed food revolution, and clears up many myths about popular food products.
