There are plenty of folks who par-boil ribs, but I find that makes them awfully greasey. Rub them or marinate them to taste and then cook them slowly over low heat. Slow and low is the secret of great ribs. I find that cooking them for a couple of hours with just rub and an occasional spraying of apple-cider makes them tender and moist. Then, another slow low hour basting with your own sauce. I like to mix sauces to taste. I love sweet and tangy with just a touch of heat. MMM good!
