Should my kids help care for the garden?

It depends on the ages of the children and the way you garden. Power tools and yard and garden chemicals should never be used by or around children.
I used the Square Foot Gardening method (http://www.squarefootgardening.org) beginning when my children were young. They each had there own garden box by the time they were around 7 years old. You could being even younger than that.
When children are involved in growing their own food they are more likely to try different fruits and vegetables. Be sure to teach them to ask you before consuming something so they don't eat something inedible.
