Having said that, the fact of the matter is a plane is designed to fit within the seats a certain number of passengers. When one passenger is too large to fit into their seat properly it is not the airlines responsibility to lose the money from a seat that could have been sold to another paying customer to accommodate an obese person. The airlines are running a business and the feelings of people involved don't always factor into that.
Another thing is the safety of the others on the planes. If a person is hanging out of their seat and blocking the aisles that poses a safety concern. What if there is an emergency and people need access to the exits? It's unacceptable to put the lives of other passengers at risk because one passenger's feelings may be hurt. As bad as I would feel for that person (or for myself if it were me) it's a matter of safety and that overrides the importance of someone's feelings hands down.
The airlines have weight capacity restrictions and limited space. When a passenger does not meet the guidelines set forth by the airlines (which are there for safety) then it's simple in my mind, feelings don't mean jack and safety takes priority.

Southwest was within its rights to kick Kevin Smith off the flight. Business owners have the right to refuse service to anyone, for any reason (except race). Being fat is not like being of a certain race. One has complete control over one's weight.
