Read them, listen to them, watch the movies. They're all rewarding in their different ways, and it's not an either/or, you'll enjoy the different versions.
Personally I'd start with reading the first book. You'll find out quickly if you like them or not, and there's a lot more in each of the books than the movie versions. In some cases the movies won't make as much sense if you haven't read the book first, because some of them are like the highlights from the book with some of the in-between explanations skimmed over.
Also one of the best things about Harry Potter is the sheer fun and wit with which J K Rowling writes, which comes over best in the book.
For listening I recommend the Stephen Fry audio CD version. These are readings of the entire books, and some people say they get more out of Stephen Fry's reading than they do reading the books themselves. He's a great comedian, writer and actor, and his delivery brings out things you might not have noticed on the page.
The movies are also good. It doesn't matter that you already know what happens. Remember pretty much everyone would have read the book before they saw the movie anyway! The visuals are great, and the fun and feel of the books carries over very well.
One thing worth mentioning... a lot of people including me like the first three books in the series a lot more than the rest. But we read the rest anyway, because by then we were hooked.
Most people that have read the books at all have also re-read them a few times. Always a good sign!
As for whether it's too late... well you missed some of the excitement of waiting for the next book to come out, but these books are going to be around for a long time, probably generations or more.

I have made the mistake of watching some of the films before reading the books. All I can say is, I had no idea what was happening. I feel the movies are made for fans of the book, and seem relatively incoherent otherwise.
It is not too late. I still haven't read the last two!
