Mahalo has some great instructions for freezing corn. You can freeze it on or off the cob, but you'll want to blanch it on the cob first, no matter which method you select. http://www.mahalo.com/how-to-freeze-corn After blanching, you plunge it into cool water to stop the cooking process.
