Should I cook with the vegetable skins still on?

Do vegetable skins provide any nutritional benefits? Is peeling vegetables better than not peeling them?

Separate topics with commas, or by pressing return. Use the delete or backspace key to edit or remove existing topics.

You can leave an optional "tip" with Mahalo's virtual currency, Mahalo Dollars. If you are asking a difficult question that might require some research, or if you'd like a wide variety of feedback, a higher tip often leads to more answers to your question.

I have read that the majority of nutrients are just below the skin of a vegetable. I think as long as they are washed properly eating the skin will be fine but eating without the skin is till better than no vegetables at all.
