One of my favorite ways to make chicken is to roast it in the oven will some fresh herbs, olive oil, salt & pepper, and a few veggies. The chicken turns out really soft, juicy, and flavorful and the veggies soak up the juices from the chicken and end up tasting amazing! Here´s what you need:
*4 chicken thighs or breast with bone and skin
*4 cloves of garlic, minced
*about 3 tbsp oregano
*3tbsp salt
*3 tbsp black pepper
*5 tbsp olive oil
Rinse the chicken and trim off any extra fat
Take the minced garlic and stuff it under the skin along with a little bit of salt
Rub the chicken with olive oil and
Mix the salt and pepper and rub it over the chicken, then rub in the oregano leaves
Chop up a couple of carrots, potatoes, and any other vegetables you´d like and roll them in olive oil, and a little salt, and put them in the baking pan or Pyrex along with the chicken.
Bake at 350ºF for about a half an hour to forty-five minutes, or until the skin is crisp, golden brown, and the juices run clear. Enjoy!
