Area 51 is the Groom Lake testing facility where the US developed and tested new aircraft, such as the U2 spy plane, the SR71 Blackbird, the F117 Stealth fighter, and presumably other aircraft. The government wanted to keep the development of all of these secret because each of the projects gave the US a military and/or technical advantage over other countries. If these projects were publicly known, other countries would presumably develop countermeasures to these projects, making their development pointless.

Before orbital spy satellites were developed, manned reconnaissance aircraft were the only reliable method of getting imagery over hostile countries, so secrecy of the development of these aircraft was essential to the survival of the airmen who flew them and to the mission success of the projects. The same could be said for the development of stealth aircraft; the success of their design and survival of their crews depends on that design not being compromised.

One may presume there are various military and intelligence ongoing projects there, and having a location where these projects may undergo testing without the prying eyes of the public or other nations is essential for their success.

Despite the secrecy of the government, much is known about the facility, and there's nothing to stop any country with an orbital spy satellite from taking imagery of the area. Russian satellites have taken imagery of the Groom Lake Testing Facility and made them commercially available, for example.
