Gallons is a measure of volume, while grams is a measure of mass. So the answer depends on the substance you're talking about (and importantly, its density).

Depending on what you are dealing with here, usually in chemistry, you assume that the liquid substance has the same density as water.

If that's the case, then 1kilogram of water equals to 1 litre of water, which equates to roughly 0.264172052gallons.
