Steve Vai - Whispering a Prayer - not much shredding here. Vai demonstrates his awesome control over the guitar in this touching song. Also, think theremin.

John Petrucci - Glasgow Kiss - Petrucci is often criticized for lacking melody. This song is all about melody, and some great riffs and variations. His finest instrumental.

Liquid Tension Experiment - Acid Rain - Petrucci is on guitar again, only the rest of the band is more involved. :D

This is someone covering the bass part, I think it's more interesting than the other videos of the song. The song is of course a classic.

Anyway the instrumental song they did that I'm sharing is just about as hot of a concert opener as anyone has written. It's Child's Anthem from their first album and kicks a concert off with pure instrumental joy. And did I say that this tune is very hard to pull off well. I've played in bands where we've worked it up and it takes some serious chops to do right. So here it is...

That is a toss up since there are so many great instrumentals out there and it really depends on the type of Rock you like... These three would have to be at the top of my list though: DragonForce - Instrumental Solo

Great stuff. I picked up "Passion and Warfare" as a result of hearing this. I'm on the lookout for Extremist and Surfing With the Alien.

One of the hottest groups instrumentally was Toto. Steve Luthaker (guitar) the Porcaro brothers Jeff (drums) and Steve (keyboards), David Paich (keyboards) and David Hungate (bass) who eventually was replaced by Mike Porcaro the third Porcaro brother. The thing about these guys is they were all top studio musicians before the band and have humongous musical chops. Anyway the instrumental song they did that I'm sharing is just about as hot of a concert opener as anyone has written. Well as an obsessive Beatles fan, I guess I'll throw them into the mix. They only recorded two insturmentals in their time. One of them, "Flying," was released on Magical Mystery Tour. That one was more of a psychedelic jam, but this one is a smooth rocker. It was recorded in 1965, but never officially released until Anthology 2 in 1996. It's one of the few songs credited to Lennon/McCartney/Harrison/Starkey. It's the 12-Bar Original:

Absolutely wonderful. One of my all time favorites is "Rattlesnake Shake" from Live at the Boston Tea Party. And "Sleep Walk" WOW! I am so, so happy that I asked this question.

If you like the Liquid Tension Experiment stuff, these guys are rather prolific and play a lot of mix and match:
This is Petrucci's main group. Three of the LTE people are members:
An older song, off their third album - not instrumental:
http://www.youtube.com/watch?v=kONQ8cp3Tlc
A newer song, off their 6th album (they have 9, a 10th coming this year):
http://www.youtube.com/watch?v=kONQ8cp3Tlc
This is a 1.5 hour stream of instrumentals pulled off of albums by Dream Theater, old and new - some of them are extended instrumental segments from songs that aren't, others are instrumentals:

Here's John Petrucci and the keyboardist in LTE (who is the current keyboardist in Dream Theater and has been since 1998 or 1999) playing some acoustic stuff as a duo - I almost posted this in my initial response but I figured you were looking for something heavier - this is one of my favorite songs:

The bassist in Liquid Tension Experiment is none other than Tony Levin. Here's some King Crimson, though Levin wasn't a member when this song was made, he's probably played it with them as he has been with the band for over 20 years - this song is absolutely mind bending once you see/hear/know what they are playing:

This isn't rock, but it is impressive! Victor Wooten manhandles the bass here:

Here's a very impressive guitarist that plays a normal guitar not unlike a chapman stick:
