Not sure this would count as a parody (the original isn't, but the mashup somehow resembles one), but it's my favourite "Single Ladies"-inspired video.
I'm gonna have to go with the Justin Timberlake SNL version. I don't know about everyone else, but JT's sneaky appearances have been AWESOME. If you watched SNL this weekend (12/13/08) he makes an appearance as a janitor in the digital short "J*zzed in my pants".

Hands down, undisputed winner: Shane Mercado's version on the Bonnie Hunt Show. Just type in "Bonnie Hunt" on You Tube.
I think this one because it makes fun of the fact that she's played the same part in every single one of her songs, the coy eyes while obviously trying to hooch herself out.
