My favorite ones are Anatomy for the Artist by Sarah Simblet (gorgeous, unapologetic photography) and Cyclopedia Anatomicae by Gyorgy Feher. The latter is a massive tome that contains detailed bone and muscle drawings as well as the outer shape. I have a huge library of pose books and anatomy books, but these two are my must-haves. I could lose the rest and be happy with these two forever. :)
The other benefit of the Cyclopedia is that it also has awesome sections on animals--dogs, cats, horses, sheep, pigs, and more.
