New Hampshire is a very big state. I can give you better guidance if you can let me know where you'll be.
Best pizza is a tough question, as New England in general is not known for it's pizza (being a native New Yorker I am very picky as to my pizza). that said there are a number of chains represented- such as Lui Lui and bertuucci's that have predictable pizza.
For seafood, I'd recommend Markey's Lobster Pool (Route 286, Seabrook, NH, (603) 474-2851). Seabrook is right over the Massachusetts border.
Best experience...there are three I'd recommended. hampton Beach has lots of traditional "carny" type food in a casual atmosphere. Portsmouth has a number of great little electric eateries near the Strawberry banke historic district. Spend some time walking about, and select a place with a menu of the day that seems intriguing to you.
Up further north, the Eagle Mountain House has gourmet food in an elegant setting.

Another of my favorite selections would also be in Portsmouth for a nice Dinner at night where you can then later take a walk in the park and over by the water.
3. Portsmouth Brewery, 56 Market Street, Portsmouth, 603-431-1115 or 603-431-8359, http://www.portsmouthbrewery.com/ - make sure to check that website out. It's awsome and includes a calendar you should be aware of. They have an amazing selection of beer and I always enjoyed getting their hard cider (my favorite, over any beer.)

Need 3 Cool Eateries in New Hampshire!
I hope to be driving up to New Hampshire in the fall to see the beautiful colors, since I have never been. Please give me 3 best places to eat:
1. Pizza
2. Seafood
3. Fun eating environment / experience (can be any style of food)
since I plan on a 3 day trip.

I lived on the seacoast of New Hampshire for about 7 years and now live in MA. I must say my husband and I miss the best pizza place and nothing can compare.
