You can catch Amtrak at Santa Ana, Irvine, San Capistrano, or San Clemente. From there you would need to get off at the Solano Beach Amtrak Station which is about 8 miles from Sorrento Valley. A Saturday trip shows up as $15 at Amtrak's web site. You can reserve tickets at http://www.dot.ca.gov/rail/go/amtrak/routes/pacific_surfliner/index.cfm Amtrak is a little more expensive, but you do have reservations, there are no connections, and the train is nicer.
If you want to go directly to Sorrento Valley, take Metrolink or Amtrak to Oceanside. Once there you can purchase a day ticket and take the train on to Sorrento Valley. No reservations are needed for Metrolink or Amtrak.

Is there some way I can take the train from South Orange County to the Sorrento Valley in San Diego?
I think the Metrolink only goes as far south as Oceanside. From Oceanside I would have to switch to the Coaster? Metrolink hours appear to be very limited as well.
