Basically, the wife takes her husband's rank and title but not the other way around. So Prince Phillip would not have any title had he not be granted it on the eve of his marriage by King George VI. He had been a foreign prince but gave up those titles to become English.
With Kate, there is no such complexity. She becomes Queen if Prince William becomes King. In the meantime, after marriage she will be a Princess.
If William were to die after becoming King but before Kate, the throne would pass to the next male heir, unless there were none (but there are lots in this case).

"In the meantime, after marriage she will be a Princess."
Who grants her title of Princess? Could she be granted any other title beside Princess?

Would Kate then lose her title of Queen?
She would be a Princess automatically because she married a Prince. Whatever other titles Prince William has would also be extended to her. He will probably be made a Duke of somewhere so she will be the duchess. No, you don't lose your title of Queen but it gets a sort of conditional modifier of some sort, like the old queen was the Queen mother. I'm not sure what it would be, probably it would depend on the relationship to the heir. She would be the Queen mother if she had a son who became King and his wife would be the new Queen.
