God of War (one and two).
Epic, brute, with a great story-line of a hero against his will. The game takes the most out of the PS2, both graphically and performance-wise. It plays brilliantly and easily, even when faced with the enormous bosses. you never get the idea that your fingers are getting entangled because of awkward controls or strange combos.
A (very!) good second is the Metal Gear series on all Playstation consoles (I, II and III). The great epic (albeit somewhat confusing) storyline, eye for detail, graphic superior quality, and the very inventive puzzles (psycho mantis!), make this franchise one of the best ever.

If you want to know more about Final Fantasy, its basically a japanese role playing game set obviously in a fantasy world. The nice thing about the series is that you can start playing any one of the games because they are all independent from each other story-wise.
Another game I believe that makes the PS2 special is Shadow of the Colossus. Its kind of like a hybrid action/adventure/puzzle game where the main highlight are the colossus bosses. Just check out the video below, it was a PS2 graphical masterpiece:

I think Metal Gear Solid 2: Sons of Liberty would get my vote. Too bad I can't vote on PS3 games, as I think MGS2 is only topped by MGS4.

Ah, final fantasy games are RPG's (role playing games). Each one is a guaranteed 40 hours of gameplay (over 100 hours if you are trying to go for/find everything). The thing that sets Final Fantasy apart are the storylines! They are huge, epic, very intertwined, and well thought out. Also, if you want awe-inspiring visuals, no movie cutscenes ever top Final Fantasy cutscenes, they are breath taking!
I remember playing Final Fantasy VIII on my PS1 and I was blown away at the graphics they achieved on a regular old playstation. Trust me, you will be impressed by the detail and you will be drawn in by the story, hehe

From a gameplay perspective, Final Fantasy 12 has to be the best. The story didn't exactly set the world on fire (got a bit confusing with all the politics and stuff), but the gameplay is without a doubt one of the best IMO.
