Despite its cost, I'm going to have to go with Rock Band 2. They have over 500 songs available so far on the PSN and they have seem to have no intention of slowing down. With that kind of choice, it's very easy to customize the kinds of setlists you are likely to see, be you a fan of classic rock, metal, new wave, alternative, or punk. They've even got a bit of alt country to go with their healthy dose of southern rock.
As for other non-music games, Little Big Planet is something you should definitely take a look at even if you're not normally a big fan of platform games. They really did a great job with the gameplay and level design. You also have user generated content that you can download as well.
Finally, while I am beginning to love the Call of Duty series (I got a late start), you cannot go wrong with The Orange Box. For the price of a single game, you're getting a great game in Half Life 2 and its two expansion packs, episodes 1 and 2. That alone is enough to justify the cost, but wait, there's more! You also get Team Fortress 2 if you are an online FPS gamer, or if you're more of a puzzle gamer, you also get Portal. Portal so cleverly uses its physics engine and new gameplay that it will make your head spin, particularly when you create a portal at the bottom of a deep pit and use it to launch yourself into another part of the room. NOTE: Do, however, download the patches to this game before playing, as the initial release on PS3 was kind of wonky. However, the patch fixes a lot of that, and it's still a spectacular game.

Little Big Planet (New look on platform games, charming and overall fun, especially with friends)
Metal Gear Solid 4 (It got pretty much a perfect 10 from every game site, but if it doesn't interest you or if you haven't played any of the other games, I would choose Fallout 3 as a backup)

This is what I would get:
1.Ninja Gaiden Sigma
2.Call of Duty: world at war OR (cheaper) Call of Duty: Modern warfare 2
3.Soulcaliber IV

The only games I have played for PS3, were on my friend's PS3, and were "Buzz quiz TV" (trivia game), which I personally like, Jeopardy, WHICH WAS HORRIBLE(PS2 version much better), and Call of Duty: world at war, which I liked a lot, and Call of Duty: Modern Warfare.(which is fairly similar to world at war) This is what I would get:
1.Ninja Gaiden Sigma
2.Call of Duty: world at war OR (cheaper) Call of Duty: Modern warfare 2
3.Soulcaliber IV
