Well...as an opinion question, this is an interesting one...
While I will agree that both the aussie, in fact an American bred herding dog and the Border Collie have amazing speed and agility - lightning quick reflexes and natural bullet like action around a rally or agility field (or herding ring)...
I will vote for the Greyhound as the most beautiful, athletic and graceful athlete among the canines. Imagine the sight hound as bred to work in wide open hill tops, flushing and sighting game and then racing after it for sometimes miles until it is caught.
These hounds have uniquely flexible spines which allow for fantastically long strides and can approach speeds of up to 40 miles per hour in perhaps three to four strides alone. They can turn on a dime, jump and see better than most dogs and I could go on.
If you have ever been lucky enough to see a greyhound running free (not racing) - you would agree with me. It is a truly amazing sight. Oh - they are wonderful companion dogs as well...
All dogs are beautiful, but the 'Grey' wins the canine runner of all time award!

Have you seen an Australian Shepard in a rally or agility test?
They have the most graceful run. when they open up and make those turns they just take my breath. Such a beautiful sight.

Of course, almost every time i've see one of these ralley/agility courses there is at least one if not more. They are very intelligent dogs, and physically capable of doing these courses, they are ideal dogs for that sport. check out the link for more;
