I'm always a Terran so a lot of those things aren't relevant for me. The overmind is supposed to be the thing that controls all of the Zerg, and is actually the collective consciousness of the species, and looks like a giant eye. The cerebrate is supposed to control individual units, so when you're playing, you're the cerebrate controlling your characters. An executor is the leader of a Protoss templar caste.
Overmind is a made up word. Think "overlord" with "mind" instead of "lord".
An executor in real life is just someone who does something. Like an executor of a will is the one that lets people know what they get from the person who died.
A cerebrate would be someone who cerebrates, or someone who thinks a lot.
