According to the Dr. Spock website, serving favorites with nutritious alternatives might encourage better eating. For example, if your son loves peanut butter let him dip some veggies or apple slices in it. Dipping can also be fun for a toddler. The site also suggest serving a small portion of something new next to a favorite. Also don't be discouraged if he keeps rejecting new foods, according to the site it takes an average of 15 exposures to the new food before a toddler will accept to eat it. So keep putting out those veggies.
