Lots of things. Besides the obvious fruits and vegetables, you can eat sprouted grains and legumes (they're really bad for you uncooked otherwise); raw or sprouted nuts; and raw dairy (but get it from a farmer who is specifically set up for that, not just selling it on the side but producing for a dairy). This would include raw milk, cream, cheeses and butter. You can make raw yogurt, kefir and villii yourself from the milk.

You can eat dried jerky--make it yourself in a food dehydrator so you know what's in it and how it dried. Some people will eat raw meat without drying it. I never got that far with it.
