What response time should I expect from a company selling a REST Web Service?
Have you seen APIs specifying max and average response times for web services? Can you point me to one on the web

I don't know much, or anything, about REST web, but I do know that a great honest resource for information about various computer processes is O'Reilly and Associates, and it looks like they have a new book that might help you evaluate your options.
