Those tags are more specifically called hashtags.
Twitter itself does nothing with the hashtags. (Other microblogging services like Identi.ca do.) However, you can use Twitter search to specifically find or exclude individual tweets marked with the hashtag.
You can ignore tweets containing a specific hashtag using this Greasemonkey script:
http://userscripts.org/scripts/show/41201
If you only want to follow a specific hashtag, I'd use Twitter search (http://www.summize.com) and search for #keyword, then subscribe to the RSS feed for that search.

How do tags work on Twitter?
On Twitter it seems that people tag their tweets by putting #tagname in them.
Is this just a convention? Does the software recognise tags? What can you do with tags and tagging?
For example, one person that I follow sometimes writes in Dutch as well as English. He seem to tag the Dutch posts with #nl. Is there a way I can tell Twitter: "I want to follow this person, but ignore posts tagged #nl"? Or for that matter, "I want to follow person X, but only for posts tagged Y or Z"?
Couildn't find anything about tags in the Twitter help or the Mahalo pages on using Twitter, so any tips would be welcome.
