about How to Make Petit Fours
I've tried to make two batches of this petit four frosting and it isn't working - what am I doing wrong? Is something missing from recipe?
Ok... I've tried to make two batches of this petit four frosting and it isn't working. What am I doing wrong? Is there something missing from the recipe?
I used:
2 C sugar
1/8 tsp cream of tartar
1 C water
Then brought that to a boil. Boiled until it reached 226*F on a candy thermometer
took off the heat to cool and each time around 120*F it turned really white and began to get really stiff. I added the powdered sugar (sifting it into the pan slowly) at this point and I had to add a little water to make it even remotely thin.
When I went to cover my petit fours, by the time I got to the second row of five, it was thick and wouldn't hardly go over the sides of the cake. I tried a bite of one and it is SUPER sugary.

You are missing egg whites. From about 8 eggs in the above recipe.
On the side, beat egg whites until it holds stiff peaks. (make sure there is absolutely no egg yolks in your whites)
Then pour the hot syrup mixture into the egg whites in a thin stream, beating constantly.
You are now ready to using your icing.
