Why do plants need to grow in dirt?

Why not in the air or on a piece of paper? Why can't we just water the seed and let it grow on a flat surface? I like dirt.... But I hate it when it's stuck under my nails.

That's a good question. It's a fallacy that all plants need to grow in dirt or soil, but it certainly helps nurture the plant better. You can plant a bean seed by simply moistening a piece of a paper towel, and by watering them every day. The soil is what keeps the water there, and allows the plant to get its water to survive, so that it does not evaporate. It also provides minerals and nutrients that are healthy for the plant. Not all soils have all the nutrients the plant needs, so that's why people add fertilizers, to facilitate the growth of the plant. So, to answer your question, they do not need soil or dirt, but it certainly helps the plant get its nutrients. Check out the source and the video for more info on what plants need.

Plants don't need dirt to grow; they need the nutrients contained in dirt, plus water to dissolve the nutrients and make them available to the plants.

Hydroponics is the use of nutrient solutions to grow plants instead of planting them in soil. The technology is scalable and is starting to be used for food crops on a commercial scale. Advantages include higher crop yields, freedom from soil-based diseases, and much lower water usage. Disadvantages include bacterial and fungal growth in the nutrient-rich and humid environment (hydroponic farms are generally enclosed in greenhouses, which add additional start-up costs as well as the humid conditions).
