Interestingly, my current favourite is just-crowned X-Factor (British talent reality show) champion Alexandra Burke's soon-to-be-officially-released cover of the same song.

As odd as it is, there is an absolutley amazing cover of OutKast's 'Hey Ya' by a guy named Mat Weddle (of the band Obadiah Parker)

Check it out, you won't regret it. As a musician, it blows my mind how a guy could take a decent, ass-shakin dance song and turn it into such a great, beautiful arrangment.

Cheers!

Jeff Buckley's cover of 'Hallelujah'
Originally written by Leonard Cohen, Buckley created a simplistic, yet intensely moving version of the song, removing the soft, deep stylings of Leonard Cohen's voice as well as the choir during the chorus.

Travis Morrison covers "What's Your Fantasy?" by Ludacris to hilarious and catchy effect. The instrumentation on Morrison's version consists of what could very well be a toy guitar. But it's his enthusiastic, geeky delivery of Ludacris's lyrics that truly make this a standout cover song.

Definitely Ben Folds' cover of Dr. Dre's "Bitches Ain't Shit".

He really takes the song and flips it on its head. Beautiful piano behind really dirty lyrics, it just kind of shows you how ridiculous rap lyrics can be sometimes. Not to mention Ben Folds is an amazing musician. (Definitely my favorite. His personality is awesome as demonstrated in the provided performance.)

But he really pulls out a different storytelling quality in the song and it's very cool to compare and contrast the two versions of the song.

Here's the performance of the song at the first Ben Folds show I ever went to:
