Sheryl Crow also does a pretty decent job of the cover.
Damien Rice's performance during Cohen's induction into the hall of fame earlier this year is adequately heartbreaking.
And now for something completely different...Bob Dylan. Not the best video or recording, but classic Dylan nonetheless.

My favorite is easily Jeff Buckley's, but since that's the most obvious, I'll go with my second favorite. It's Rufus Wainwright performing the song on piano. Heartbreaking.

Probably the most unique and interesting version that I've heard recently is Chris Botti's (jazz trumpeter) on his holiday CD "December". If you like jazz it's really reflective and spiritual. I think my favorite is also the Wainwright version. Here's a video of him performing it live at Glastonbury Festival, with a lovely melodic accompaniment from his sister Martha. Sheryl Crow also does a pretty decent job of the cover.
