There is an option for this under File-->Library-->Consolidate Library.
I have not personally tried this, though. You can also tell iTunes to keep your music organized according to the tags that you edit in iTunes by going to Edit-->Preferences-->Advanced and checking the "Keep iTunes Music folder organized"
