Cooking is a must.

Also small mastery of basic maintenance. Everyone should know how to change a tire. Everyone should know how to check their oil (if not completely change it), jump start a car, and change wind shield wipers.

Everyone should know to check for maintenance problems in the toilet tank. You should know how to replace the chain, the plunger, and the counter weight.

Everyone should know how to clean their house. The best way to dust, vacuum, and what type of cleaners to use in an oven.

Everyone should be CPR certified. Or at least took a class. Watching people do it in movies/TV shows is not the same.

Well, this is only my opinion, but my first choice would be cooking. If you spend a good amount of time gaining knowledge and skill, being a master cook/chef would be an amazing skill to have. It will be useful every day for the rest of your life, it will help make you friends, it will give you something to talk about, and man it will pay dividends when you get to eat your own amazing cooking all the time. If you're looking for a skill to master, that would be my suggestion. It's not something that you can do overnight, I imagine it would take years to get there. But it would be extremely useful.

One of the things I think is essential is to learn to enjoy your own company. That means things like being able to eat at a restaurant alone without feeling uncomfortable, having active interests/hobbies that you want to spend time on whether or not other people are involved, and being able to find your way around in strange circumstances with few resources. It generally will make you a more enjoyable person to be around, too!
